Additives you should avoid if you have diabetes

The enemy of the diabetic is sugar in any form. You need to pay close attention to what goes on your slice of pizza. Forget pineapple and other fruits, as well as pickled cucumbers or pickled mushrooms. The most important thing, however, is to set aside sweet sauces – barbecue type, ketchup, garlic sauce on mayonnaise, cranberry jam and the like. Instead, a slice of pizza should be loaded with vegetables. Tomatoes, onions, peppers, garlic, arugula, zucchini, eggplant and mushrooms – they contain a lot of fiber and have a low glycemic index. And if you want to “spice up” the pizza already on the plate, instead of sauces that may contain sugar, choose a little flavored oil. The effect will positively surprise you. If diabetes is not combined in you with obesity, you do not need to be afraid of cheese. Fats do not convert to sugar in the body, so they will not affect blood glucose levels.

Dough, the main culprit

Pizza dough is made from flour. Flour, in turn, is simple carbohydrates (and therefore sugars) in its pure form. This is primarily why you need to be careful with pizza. So which ones should you choose so that you don’t raise your blood sugar levels too much? If you’re at a pizzeria, choose a thin crust pizza first and foremost. The less of it, the better. However, the most sensible thing to do, if possible, will be to choose a dough on whole wheat flour. However, finding it in a pizzeria is not as easy as it may seem. So you can prepare it yourself. Then the best recipes will be those in which yeast also does not appear. Why? Because if they appear, you also have to add sugar to the ingredients, which is a nutrient for yeast.

Version 1: on spelt flour

  • 400 g of spelt flour or other whole-wheat flour (such as rye),
  • A tablespoon of olive oil,
  • 5 g of dried instant yeast – although it won’t rise much without sugar, it will fluff up the dough a bit, alternatively you can replace it with baking powder,
  • 1.5 teaspoons of salt,
  • 300 ml of water.
    Mix the ingredients together and knead the dough thoroughly, then leave it for an hour or more. After this time, roll out as thinly as possible and place on a baking pan. Spread the pizza with tomato sauce (for example, made from tomato paste with basil and oregano) and top with vegetable toppings. Bake at 250 degrees for about 10-15 minutes.

Version 2: on a base of millet groats and rice flour

Groats of all kinds are particularly recommended carbohydrates for diabetics. To prepare a pizza dough with its participation you will need:

  • A cup of millet groats,
  • 6 tablespoons of rice flour,
  • 2 tablespoons of oil,
  • About a glass of water,
  • Tbsp. of ground flaxseed.
    Cook the millet groats and set aside to cool. Put all loose ingredients – semolina, flour and flaxseed – into a bowl, add oil and water, and knead the mixture until smooth. Pour it thinly into a baking pan and bake for 30 minutes at 180 degrees. Note: we put the ingredients on this pizza only after baking.

Version 3: wheat and spelt flour

If you want the taste of pizza to be more like the traditional one, mix whole-wheat flour with the regular one. You will need:

  • 200 g each of wheat and spelt flour,
  • ca. 300 ml of water,
  • 3 tablespoons of olive oil,
  • pinch of salt,
  • packet of dried yeast.
    Knead the dough, just as for version No. 1. This portion will give you two thin crust pizzas. But remember: share them with loved ones, while serving yourself 1-2 pieces.

And finally, a few words about the history of pizza. It was first prepared in ancient Greece, then the Romans appropriated it, and finally the Americans created their version for the rich. In 1889, the court baker of Naples baked a pie for Queen Marguerite of Savoy of Italy decorated with toppings in the national colors: basil, mozzarella and tomatoes. This is how the simplest pizza called Margherita was created. Recent research confirms that the word pizza originated not in Naples but in the port city of Gaeta in central Italy. There, in the archives of the cathedral, a document from 997 is kept, in which the word pizza was used.
